  Nocturnal harvest.
Peeling - pneumatic pressing.
Alcoholic fermentation at low temperatures.
Part of the harvest is left to mature in vats and oak casks.

Tasting notes
Color: Clear, pale yellow with glints of green.

Nose: Intense, very fruity (apricot, etc.) and hints of licorice.

Palate: Supple and well-balanced with a nice persistent flavor.
Serve between 10° and 12°C.
