Peeling - Pneumatic pressing.
Alcoholic fermentation under controlled temperatures.
Left to mature for one year in vats.

Tasting notes
Color: Yellow straw.

Nose: Intense stewed fruit scents (quince, etc.).

Palate: Very full-bodied (residual sugar 100 g/l) but with a good balance.
Serve between 9° and 11°C.
